Where Our Mushrooms Come From: Hand-Picked and Processed in the Tibetan Areas of Aba and Ganzi

The wild mushrooms in our hotpot at Fishing Teahouse & Wild Mushroom Hotpot don't come from a wholesale market. The owner runs his own wild mushroom export and processing business, sourcing and doing initial processing year-round on the high-altitude Tibetan plateaus of Aba and Ganzi in Sichuan. Matsutake, Porcini, Morel, Laorentou, and other varieties are inspected and sorted immediately after local pickers gather them from the forest.

The export business already demands a stricter standard for appearance, freshness, and edible-species screening than typical retail sourcing. The mushrooms used in our hotpot come from that very same source — we simply set aside a portion for the restaurant to cook to order, rather than buying it secondhand through a middleman.
